This is my favourite salad of all time. I could pretty much eat it all day, every day. If you are not low fodmap, then you can add up to two avocados
Ingredients
- ½ tbsp White Wine Vinegar
- 7 Spring Onions, green part only, finely sliced
- 8 Tomatoes, de-seeded and finely diced
- 1 Red Chilli, de-seeded and finely diced
- 1 Bunch Coriander (20-30g), stalks included, finely chopped
- ½ tsp Salt
- ½ Lime, juiced
- ½ Ripe Avocado, diced
Utensils
- Large Bowl
- 2x Small Bowl
- Heatproof Spoon
- Fork
Method
- Place the white wine vinegar into the bowl and add the spring onions. Leave for a few minute to allow the spring onions to absorb most of the vinegar
- Add all of the rest of the ingredients and stir well to combine. Serve.
